1. Grandma’s Chewy Chocolate Chip Cookies

Nothing beats the timeless appeal of chocolate chip cookies, and my Grandmother’s recipe is a tried-and-true favorite. The key to these cookies is a balance of crispy edges and soft, gooey centers. Find the full printable recipe and more tips here.

 

 

 

 

 

 

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 and 1/4 cups all-purpose flour
  • 1 package of vanilla instant pudding
  • 1 teaspoon baking soda
  • 1 – 12 ounce package of semisweet chocolate chips
  • 1 cup of chopped nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or use silicone baking mats.
  2. In a large bowl, cream together the butter, sugars, vanilla, and pudding until light and fluffy.
  3. Beat in the eggs, one at a time.
  4. In another bowl, whisk together the flour, and baking soda. Gradually add this to the creamed mixture.
  5. Stir in the chocolate chips.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet. I use this cookie ball scooper.
  7. Add 3 chocolate chips on top of the balls for aesthetics.
  8. Bake for 8-12 minutes, or until golden brown.

Tip: To freeze the dough, split it in half and transfer it to a zip-top bag for storage. Freeze up to 6 months. When you are ready to bake them, thaw the bag of dough on your countertop until soft, then pour the dough into a bowl and follow steps 6-7.

  • 1 (12 oz.) pkg. chocolate chips
  • 1 c. chopped nuts (optional)

Instructions

  • Mix flour with soda.
  • Combine butter, sugars, vanilla, and pudding in a large bowl.
  • Mix until creamy.
  • Beat in eggs.
  • Gradually add flour, then chips, and nuts.
  • Drop by teaspoonful on cookie sheet.
  • Bake 350 degrees for 8 - 10 minutes.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 3 cups all-purpose flour

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter and sugar until smooth. Beat in the egg and vanilla.
  3. Combine the baking powder and flour, and gradually add to the wet ingredients.
  4. Roll out the dough on a floured surface to 1/4-inch thickness. Cut into shapes with cookie cutters.
  5. Place on the prepared baking sheet and bake for 6-8 minutes, or until the edges are lightly golden.

Tip: You can freeze the rolled-out dough in sheets between layers of parchment paper. Thaw slightly before cutting and baking.

  • 1/2 cup Margarine, softened
  • 1/5 cup Sugar
  • 1+1/12 tsp. Vanilla
  • 1 lg. egg
  • 2 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt

Instructions

  • Beat margarine, sugar, and vanilla in a large bowl with mixer at medium speed until light and fluffy.
  • Beat eggs in well.
  • Beat dry ingredients into the butter mixture at low speed.
  • Refrigerate wrapped in plastic for 1 hour.
  • Heat oven to 375 degrees.
  • Work with 1/4 of the dough at a time.
  • Roll out to 1/8-inch thick.
  • Shape or cut as desired.
  • Place on lightly greased cookie sheets.
  • Bake for 5-13 minutes.
  • To make the icing: combine 1 cup powdered sugar with 1-2 tsp. of milk. Add food coloring as desired.

  • 1 cup chopped dates
  • 1/3 cup drained and chopped maraschino cherries
  • 2 and 1/2 cups crushed cornflakes

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or silicone baking mats.
  2. Cream the coconut oil and sugar together. Add eggs, milk, and vanilla, beat well.
  3. Combine the flour, baking powder, baking soda, and salt. Gradually add to the creamed mixture.
  4. Stir in the pecans, dates, and cherries. Mix well.
  5. Drop by rounded teaspoons into cornflakes. Toss lightly to coat.
  6. Place on the prepared baking sheet and top each with half a cherry.
  7. Bake for 112-15 minutes, or until golden.

  • 1 and 1/3 cups shredded coconut
  • 1 can (14 ounces) sweetened condensed milk

Instructions:

  1. Preheat your oven to 350°F (175°C) and pour melted butter in the bottom of a 9×13-inch baking dish.
  2. Sprinkle the graham cracker crumbs over the butter in the dish.
  3. Scatter chips over this layer.
  4. Sprinkle coconut evenly over the chips.
  5. Pour the sweetened condensed milk evenly over the coconut.
  6. Bake for 25 minutes.
  7. Cool in the pan for 15 minutes.
  8. Cut into bars. Keep refrigerated in a cookie tin.
