Delicious Chicken Pesto Sandwich: A Family Favorite
Ingredients
To make this delectable sandwich, you’ll need the following ingredients:
- 1 cup of rotisserie chicken: Shredded (you can find these pre-cooked at most grocery stores, making preparation a breeze)
- 2 slices of sourdough bread: Freshly baked is best for that perfect crunch
- Pesto sauce: Homemade or store-bought, depending on your preference
- Baby spinach leaves or Romaine Lettuce: Washed and dried
- Red Onion: Sliced thinly
- 2 slices of provolone cheese
- Butter for grilling
Instructions
Step 1: Prepare the Ingredients
Begin by shredding the rotisserie chicken into small chicken tender-sized pieces.
Step 2: Assemble the Sandwich
- Lay out the slices of sourdough bread on a clean surface.
- Spread a generous amount of pesto sauce on one side of each slice.
- Layer the cheese on each slice of bread.
- Then add the chicken evenly over one slice of bread.
- Add a layer of baby spinach or romaine on top of the chicken.
- Place red onion slices over the lettuce.
- Top with the other slice of bread.
Step 3: Grill the Sandwich
- Heat the Always Pan orGriddle over medium heat and add a small pat of butter.
- Once the pan is hot, carefully place the sandwich in the pan.
- Grill each side for approximately 3-4 minutes, or until the bread is golden brown and the cheese has melted.
Step 4: Serve and Enjoy
Once the sandwiches are grilled to perfection, remove them from the pan and let them cool slightly. Cut each sandwich in half diagonally for easy handling and serve immediately. I serve these sandwiches with spicy jalapeno chips and a pickle!
If you do not have a saucepan, you can use a griddle like this one. I use our griddle if I’m making several sandwiches!

- Pesto Perfection: If you have the time, making your own pesto can elevate the flavors of the sandwich. Simply blend fresh basil, garlic, pine nuts, Parmesan cheese, and olive oil to create a homemade pesto that’s bursting with flavor. We prefer to use store-bought pesto from Sam’s Club (my son can tell the difference if it’s any other pesto brand!).
- Bread Selection: Ensure your sourdough bread is fresh. A good bakery or the bakery section of your grocery store is ideal for finding the perfect loaf. We prefer the ROUND sourdough loaves from Aldi. I used the larger slices from the center to make huge sandwiches!
- Customize Your Sandwich: Feel free to add or substitute ingredients based on your family’s preferences. For instance, adding roasted red peppers or swapping provolone for mozzarella can add a new twist to the sandwich. I’ve also added bacon, sliced avocado, and tomatoes but those toppings can get messy!
