This tomato basil soup recipe is quick, cheap and easy (also very tasty!) that you will want to add it to your weekly meal plan going forward! This is my own Nordstrom copy cat recipe since it comes very close to that delicious soup they serve.

When the hubby and I were first married, he would meet me for lunch during my workday and we would frequently go to the cafe at Nordstrom. The servers there knew us quite well and knew that we always started with a bowl of the tomato basil soup.
That was 7 years ago and since then I have changed jobs and had 2 babies so we don’t go there for lunch anymore… but I always wanted to find a recipe to replicate the soup. After a few trial and error soups, I came up with this recipe. It is very frugal and remains delicious after a few days in the frig. I have not tested freezing it since it does have heavy cream.
To make this Nordstrom Cafe Copy Cat Tomato Basil Soup, you need:
- 2 tablespoons of butter – I’m always a bit more generous with the butter 🙂
- 1/2 cup of chopped onion
- 28 oz of crushed tomatoes
- 2 cups of chicken broth
- 1 cup of heavy cream
- salt and pepper to taste
- fresh minced basil
- Saute the onion and butter until the onion is soft and see-through.
- Add tomatoes (liquid from the can as well), add broth, season with salt and pepper and bring to a boil. Simmer for about 5 minutes until the tomatoes are roasted.
- Add contents to a blender (we have a Ninja blender but any power-blender like Vitamix or Ninja works best). Add heavy cream and blend until smooth (1-2 minutes).
- I pour the contents back on the stove to keep it warm until serving. Garnish with basil when serving.
Nordstom Cafe serves this soup with amazing Parmesan butter crostinis but this Naan bread complimented this soup nicely. We eat this soup all year long but it’s perfect for those colder days with grilled cheese sandwiches.
